How to transfer hard drive data to new MacBook using OWC Envoy Pro

I purchased an OWC Envoy Pro to transfer my data from my old hard drive that was in my old Mac (2015) onto my new Mac (M1 2020). I've found videos on how to install the hard drive into the OWC carrier which I've done, but I cannot find anything anywhere on how to transfer the files onto my computer once plugging it in.

I'm sure it's an easy process but I just want to make sure I do everything correctly.

MacBook Pro 13″, macOS 11.6
