I have not used Itunes for a number of years. Sadly it has become a poor piece of software (like much Mac software which is completely over-designed now). It basically drove me crazy in the end. However, using a Mac daily ( I still love Mac hardware) I am almost forced to keep it on my computer. This means that it wants to update. I want to turn these updates off. I have tried many things but nothing seems to work: Please help.

I'm not aware of any obvious benefits of having iTunes 12.7.4.80 over 12.8.3.1. I would recommend you either upgrade to more recent build which is functionally similar, or remove iTunes altogether.
Should you want the second option you can try this approach to remove iTunes:
You may need to temporarily disable system integrity protection (SIP) while you are removing iTunes.

I just don't use the programme any more. Do I have to actually erase it from the system to stop the notifications? I thought it wise to leave it on, but also no uninstall option available with itunes right? So not easy to erase correctly. The problem is a constant update notification every few days for a security update, which cannot be turned off.
I am pretty sure I put that info in the title, but it seemed to get taken down. Maybe a bad place to put it..

Really hoping someone can help me on this. These itunes updates available notifications are coming thick and fast. There must be. a way to turn them off, but all the old methods no longer seem to work. Much appreciated

Itunes was last updated May 2019! Not likely to be updated on MacOS as music app is used on latest MacOS.
