So, I connected my phone to my laptop to back up my iCloud and when my phone turned back on, it is now set to 2018. So, everything from after I got my current phone is gone. My photos, messages and even some apps. I do not know what to do. How do I get all my stuff back?

If you have restored a backup from iCloud without taking a current backup on iTunes then all the Photos are gone.
If you have restored a backup from iTunes without taking a current backup after archiving the old backup then all is gone.
The data that is synced to iCloud is not backed up either on iCloud or on iTunes.
If you have deleted it from iCloud then it is gone from iPhone too.
Your post does not specify exactly the process adopted by you to take a backup or restore.
