At some point in the past you created a password to encrypt your backup. Once set, the only way to get into that backup is to enter the encryption password you created. If you didn't write this important password down somewhere for future recall, there is no way to find or bypass it. That's the whole point of encryption.
You can create a new backup and not encrypt that backup. You can use iCloud Backup, which doesn't require an encryption password. But you can't restore your phone from an encrypted backup unless you know the password.
