Updating iPadOS is a great troubleshooting step. To confirm, have you updated to the latest iPadOS? Apple has released a couple of updates to iOS 15 since it’s initial launch. You can find the steps for updating in the following article.
Update your iPhone, iPad, or iPod touch
If you're running the latest iPadOS can you confirm if keyboard and swipe issue occurs in one specific app, or all apps and functions? If the issue is specific to one app try the steps outlined in the article below. While the title of the article references a different issue, these steps can be helpful with app specific issues.
If an app on your iPhone or iPad stops responding, closes unexpectedly, or won't open
If the issue continues, or is occurring in multiple apps try resetting the Keyboard Dictionary. This can be done by going in to Settings > General > Transfer or Reset iPhone, tap Reset, followed by Reset Keyboard Dictionary.
