I presume you intend to use the Hidden Album feature of the native Photos App?
First, enable Hidden Album in iPad settings:
Settings > Photos > Hidden Album - set to ON
Next, from Photos Library or chosen Album, identify a photo in you wish to hide. You now have two options…
1) Touch-and-hold (i.e., a long touch) the thumbnail of the picture that you wish to hide; an Action Menu will appear. Tap Share; from the Share menu, find and select the Hide option. Your photo will be moved to the Hidden Folder.
2) Tap the photo to open the photo in full screen. Tap the share icon (a square with an upward-pointing arrow at top-right of the screen. From the Share menu, find and select the Hide option. Your photo will be moved to the Hidden Folder.
Now that you have photos hidden (and moved to the hidden folder), the Hidden folder will be visible in the Photos sidebar.
