Apple One is a bundle of subscriptions. One of those services is Apple TV+. For watching Apple TV+ content, the experience should be the same with either subscription.

Note that Apple One starts with a free one month trial for new subscribers, that excludes services for which you already enjoyed a trial. For switching from Apple TV+ to Apple One, you should consider getting a one month overlap. (If you do that, then after the trial, the old Apple TV+ subscription will be canceled automatically in favor of Apple One.)
