a few people send messages to both my spouse and I in a group mailing. After that, my spouses name appears attached to my addresses on both my personal send and receive messages whether related to the group message or personal. It’s confusing for the recipient and it’s difficult to tell who the messages are actually from. How do I stop this?

Don’t share primary accounts. Apple ID accounts are personal/individual, and so should any email address be. Get a third email account for joined email, if needed.
You have no control over the email address book/contacts list that recipients use. If they filed you under “Stacy”, then that is how it will appear.
The email application on your device would determine the send address including name, if configured correctly. Some desktop email app may allow multiple ‘personalities’ to choose from when sending. That would typically not be available on the default mail app on mobile.
