Hello - can you help? I had to stop transferring data and apps during set up of my iPhone 12 mini as I had my carrier transfer my service to an eSim before my phone was set up. So things didn't work as they should during the normal set up process. I ended up having to select don't transfer my data and apps and now want to do if from my backup in iCloud. Can someone tell me how to do this? Thanks Dale

Thanks Manjor, I ended up working it out - I erased all but not the eSim and went through set up again and all data transferred perfectly. Many thanks though for answering me.
