Since Monterey update my 2016 4 Thunderbird 13" Macbook Pro has lost the Core audio device. Sound "select a device for" choices are only the Airplay for output or nothing for input.

Did you try resetting the NVRAM /PRAM http://support.apple.com/kb/ht1379
if no resolve—
Try resetting the SMC http://support.apple.com/kb/ht3964

Solved it. Found in the Home Library Preferences Audio section some .plist files related to audio and made copies before deleting them. Sound returned. Files were: com.apple.audio.DeviceSettings and com.apple.audio.SystemSettings.plist
No change with the PRAM reset. Got both sounds (20 secs apart roughly, second one louder) so I know the speaker is working. Nothing but "Unknown" in the list for either Input or Output.
Ensured I had a full power off, power start. Looks like the SMC reset isn't for my Macbook Pro, a 2016, as it doesn't have the T2 chip; it has the T1.
I have the same problem as Adam above, where output for sound only Airplay is available, and no other options.
I'm on 2020 M1 Mac Mini. I didn't have the sound problem yesterday (Nov 1st) after updating to Monterey, everything was working fine. But got this problem today. The Mac has just been in sleep, not been turned off.
Upgraded to Monterey. Now, my MacBook is slow, less than responsive (like clicking on Preferences under the Apple symbol and getting no response), and no audio whatsoever, and video won't run on Apple TV, either. None of the above remedies have worked. Thanks Mac! Can't wait 'till a new, more professional computer company starts making machines and software the way you used to.
Lesson: DON'T "upgrade" to Monterey!
Any fixes in the pipeline, Apple?
I installed Monteray last night on my iMac. My Bose Bluetooth speaker shows up in the Bluetooth preference window, but not in the Sound preference window, and thus will not work. How to get Monteray to recognize this speaker?
Update: A simple restarting the Mac solved the problem for me. No resetting NVRAM or anything. Cheers.
Same issue with Early 2015 MacBook Air. Clearly a software goofup by Apple. Apple is becoming a new Windows 10 like glitch competitor! How can they goofup with audio devices?
I've tried every solution posted here and still nothing works. I still have the problem as described by the original poster.
In the end, the only thing that worked for me was a fresh install of Monterey. Fortunately with my time machine backup, my computer was back to fully functional within a few hours.
