I have to scan some documents and upload them to a site that will only accept xml files. Got a Mac and an Epson printer/scanner. Don't see any option to scan to xml file. Just the regular ones (pdf, jpg, etc.). Any advice on getting an xml file out of this? Looked around for a jpg or pdf to xml converter on the App Store but didn't see one. Thanks in advance.

This is a bit weird. When you scan you get an image - all the formats you quote are images: but XML is a text format with tags - like HTML (the code for web pages) but where you can specify the use of the tags with an external reference file (where HTML tags are fixed).
So you're not going to find a converter for this. For a start, you would have to use an OCR (Optical Character Recognition) application to read the text off the image and convert it to actual text (usually with a fair number of errors).
Getting the result into XML would mean knowing how to format the tags. So little of this makes sense. You should probably contact this site if possible and ask for clarification.
