iPhone 6S restore from iOS 15 to iOS 14.6 (via backups)

for some reason I can't restore my iPhone from the iOS 15 to iOS 14, even though I have backups(multiple) on the earlier version, it always restores to iOS 15.1 and fails to restore to older versions of iOS with "unknown device connected" whenever I start the restore process

I indeed tried, it seems as some things just don't work that well on iOS 15, same things can be found on Monterey(on my M1 machine), Apple's OS is not perfect, and i will perhaps try reinstalling them on both devices again

list of things i found to stop working after updating to iOS 15:

  1. Airdrop is finicky
  2. Discord(yes i am well aware that this is a third party application) screen share does not stream video, instead only streams audio
  3. Airplane mode icon stays whether Airplane mode is on or off in the status bar (is fine in CC)
  4. recently opened applications (recents screen if you will) sometimes glitches, no matter how many applications are open (if it's >1)

as of right now i found only two issues on Monterey that can be probably solved via a reinstall

  1. several weird performance issues which are not supposed to be there
  2. when clicking on display in CC you can't scroll over the brightness to change it

I'm quite new to Mac and iOS (as a power user)

Windows 10/11 modification is extremely easy compared to MacOS, the "visual annoyances" are also present, although not very surprising, but some things are expected to come honestly (Windows 10 "sliding" effect of pop-ups for example in mac storage)

Linux modification is obviously much easier(KDE/GNOME) made to mimic MacOS

and then there's a little thing that i'd just want to change like for the Mac to *not* sleep when closed or for it to not get triggered by any button when shut off
