Apple Watch LTE use

if i cancel my cellular plan for my watch, can i still use it with my phone but just the GPS/Bluetooth?

Apple Watch GPS + Cellular I’m looking to purchase an Apple Watch series 6 soon. If I purchase the GPS + cellular option will I be forced to set up the cellular option in order to use it? or is that a choice. I was thinking of getting it just to have the features but I don’t want to set up a cellular plan immediately.

Yes as long as you have your iPhone nearby.
