Transferring to new Imac

My new Imac M1 is delivered soon and i would like to know if it is possible to just

connect my IPad & IPhone into the computer and create a back up for each on the computer.

I don’t use iCloud for any of my backups i just prefer to back up via Imac which means all of my previous backups will be on the old computer.

Probably old fashioned by not using ICloud but prefer the other option of backing up to the computer.

Any help & advice would be welcome

Yes, you can do that, assuming your new iMac has enough storage to hold the backups.
