Automatic bcc

You're welcome. Glad it is straightened out. It sounds like you are speaking of the Key Flicks, where you can get numbers by flicking the letter key downwards without having to change to the numbers keys. If that is the case, you go to Settings>General>Keyboards and turn on the switch for Enable Key Flicks. If this is not it, how about a screenshot of the keyboard with a marker to show what you are referring to.

ChrisJ4203 has offered sage advice in working through this problem.
Deleting the email account from your device - and then re-adding the account - is not the major issue that you apparently perceive.
I would recommend just one additional step…
After deleting the email account from the iPad, perform a forced-restart of the iPad - before re-adding the email account:
Not knowing what you consider "normal fixes", have you tried deleting the account from the iPad, then power cycle the iPad, then add the account back. I'm guessing you may mean that you have turned off the Bcc switch and turned it back on again?
That’s pretty drastic. I wouldn’t have considered that to be a “normal” fix. And I would be concerned that I’d lose all the email that I have stored. Deleting an account might mean throwing away all that mail, especially to a non-expert. I did switch off the bcc switch and I did reboot my iPad. Strangely, my email address does appear for a fraction of a second and then disappear. And sometimes when I reply, it bccs me and sometimes it doesn’t. Really a humbug since I’m so used to it.
Deleting an email account is not drastic. And one would not lose mail unless you have a POP account instead of IMAP or Exchange. POP is the only one that stores mail on your device. The others I listed store the mail on the server and sync that to your device. If this is an intermittent issue, it may be difficult to diagnose, or it could be something about the account itself.
Well, things changed. I didn’t do anything but now it bccs me. When I start a new email it does not indicate that it will bcc me, but it does anyway. When I reply to an email, it shows that it will bcc me, and it does.

On a different topic, my iPad Mini has a very nice keyboard with the ability to swipe down for lots of additional glyphs. My new iPad Air has a very plain Jane keyboard that sucks. Anyone know why? I searched in the App Store but didn’t see one that I wanted to buy.
But aren’t others describing the same issue?
