Is there any way to export my Apple Pay transactions into a Apple supported app, like Numbers?

You can export to a csv or to a quicken data file.
Right, you mentioned I can export them…but my question is after they are exported, can they be opened in an invoicing program that Apple supports? Going further, can they be exported into another program after they are exported? (Quicken etc).
