Why is the HP site no help.

Make sure the operating selector is set to macOS 11.0
Download install then run the HP Easy Start app, when run this should download the correct drivers and software
for your printer and macOS Big Sur.
If that does nothing for you then try Resetting the Printing System.
Reset the Mac printing system to solve a problem – Apple Support (UK) After adding the printer to the left hand panel click on Default Printer and select your HP 2640
this should force the mac to download the relevant drivers and software for your printer and
macOS Big Sur.
