How do you disable automatic hashtags in notes?

I regularly use Notes to write YouTube video descriptions and social media posts ready for upload and include hashtags in them.

Since updating to macOS Monterey, the new Notes Tags feature has kicked in and now thinks those hashtags are me tagging the Notes – which is never the case and very annoying.

Is there a way of disabling Notes from automatically recognising #text as a tag?
