In the Windows world, the Fujitsu fi-7300NX Color Duplex Scanner 600 dpi
is a recognized industry leader for network scanning.
However its not compatible out-of-the-box with Mac's. There is an anftermarket
software offered by another company, but I'm shy to go that route preferring
to find a network scanner that, from the experience of Mac users, comes highly
recommended.
Does anyone have any suggestions?

Any scanner that's AirPrint compatible will work with a Mac. Just check the specs of the units you're interested in and determine which one would be best for you.

Depending on the scale of your operation, the number of Macs and people needing to scan. There are plenty of business class printers / copiers with scan to email or network shared folder capabilities. None of which requires Mac compatibility but may require some IT setup and configuration of the printer/scanner/copier. Most can also scan to PDF and then email.
