After the latest Apple Watch update the voice to text option doesn’t appear as a default option

Hello all, I just updated to the lasted watch OS and I am very annoyed that it took the voice to text button off of the message window. Now I have to click the apps icon and then select it. This is probably not a big deal for some but I work in an industry where I usually have very dirty hands and try to touch my watch face as little as possible.
