I receive this error message:

"MacOS Monterey is not yet supported and approved by IT. Contact your IT support for more information".

I bought this MacBook Pro 15inch 2018 from my previous company. JAMF profiles were removed.

We're glad you thought to ask Apple Support Communities about the issue you're having with upgrading to macOS Monterey. With the alert that you're seeing, it sounds like the Mac is still being managed. You'll want to reach out to your previous company's IT team to work with you on this.
