If you have a Time Machine backup, you can restore this folder:
~/Library/Mail/
This is the Library/Mail/ folder in your user account. For instance if your username is gymgirl13, the folder to restore is
/gymgirl13/Library/Mail/
This restores all your emails, mailboxes, and mail folders from that backup.

Depend on the Mail Server - one might still be able to Log into the Web Mail version from the Mail Server and salvage the e-mail.
www.icloud.com as example and generally - the messages might still be available for up to 30 days.
Looking for a single email is no longer supported or is very time consuming and tedious. As others have stated you need to get to your library/mail/V folders and find a mailbox and restore the entire folder. I now prefer using a third party app to keep track of my mail backup.
Since macOS Catalina, Time Machine no longer backs up your email messages from the Apple Mail app.
Here is where my email are. Note that there are several subfolders with "Vx" numbers. For Monterey it is V9. See:

It does back up the username/Library/Mail folder and by restoring this entire folder, all emails that were in place at the time of that backup get restored.
Individual email messages or email folders or mailboxes cannot be restored from within the Mail app with Time Machine. That used to work but does not work anymore. Instead one has to restore entire folders or accounts in the above directory. That username/Library/Mail folder is backed up by Time Machine, I can see it and all its contents in my Time Machine backup and have restored those folders with Time Machine, and have also migrated them from a Time Machine backup to a new computer, with all emails being restored.
Yes, thank you. I'm aware of this and was only referring to within Time Machine's interface. I should have clarified that ... sorry.
