how to install previous version of Final Cut Pro

Final Cut Pro can’t be installed on “Mac” because macOS version 11.5.1 or later is required.

I updated to Catalina wanting to update my final cut pro to 10.5. I have a Imac late 2013 which can't run Big Sur. I erased my final cut pro program and now I can't download it and install it. How can I get Final cut pro 10.5 which is compatible with Catalina?

If you have the application in the Applications folder move it to the trash. Go to the App Store, and click the button for your account in the lower left. Log in if asked with the Apple ID used to buy the software, and you should be on your Account Purchased page. Find FCP there, which can be tricky as it's ordered for some reason based on when the application was purchased. When you find FCP click on the cloud button to download it.

"erased my final cut pro program"

What version of the application was that? Have you purchased the current version of the application, or were you using legacy FCP, FCP7 or earlier?

If the question is about buying an older version of the application, that's been asked frequently on the forum, and basically requires having access to a system with a recent OS that can use the current version.
