Since I got the IOS 15.1.1 update on my IPhone, safari, maps and message apps don’t work using only the cellular service and data. I took it to my mobile service and they changed the sims card worked fine for a couple days and started to do the same thing again?

It appears from your post that you are having an issue using cellular data.
Power cycle the iPhone using these instructions: Restart your iPhone - Apple Support. While simple, this can refresh the iOS, apps and connections.Â
When you are not able to use these apps, are you able to make or receive phone calls? Are you able to access websites using a browser?
Do you see any messages at the top such as described here: If you see No Service or Searching on your iPhone or iPad - Apple Support
If so, be sure to follow the steps outlined.
