I need to temporarily go back to an iPhone 7 while I wait for my new iPhone 13, but can’t set up the 7 from my last back up as it’s on 15.1.1 and the 7 only supports 15.1. Does anyone have any suggestions on how to combat this? Happy to delete the update if someone can tell me how!

Apple does not support downgrading the device, so it is not possible to delete an update.
Wait for the next update. If you can't, create a backup on a computer, make a copy of it, open the info.plist file in the original in a text editor, and change the 15.1.1 to 15.1 inside.

I downloaded the latest 15.1 update and it is the worst thing I have ever done. And now I am stuck with this bs. Come on, Apple, you can do better.
