How do I fix my Home Screen?

I just updated to iOS 15.1 for iPad and I HATE IT! It took me forever to get my widgets back where they were before and now the icons for my apps are small and only take up half the screen even though in settings I have it set to use large icons. I also dislike the new keyboard. Is there a way to make it look like it did before?
