Please someone tell me how to change my goals on the series 2 watch.

Check the subject you posted. It clearly says SERIES 3 WATCH. I assumed your subject was the correct device and the 2 in the question was an error.
It simply may not be possible on a Series 2 watch, which cannot run the newest WatchOS software.
This is the only goal you can change on a watch 2;
That doesn't work for the series two. That's why I said series 2.
