In a few months i will live in Panama, and I know that there is no mobile operator with eSim ...
What alternative do I have to that? To be able to use mi Watch without depending of my iPhone.

Unless whoever you use for cellular service supports Apple Watch, you'll have to use your watch as a GPS only watch, meaning for it to function, your iPhone will need to be near you and the watch.

That one is on the carriers. They are the ones to determine if they will support the Apple Watch and eSIM.
