You can absolutely purchase a new iPhone with your Apple Gift Card!

This can be done a few different ways:

• If you redeemed the gift card onto your Apple ID, you can check out with your Apple ID balance online at Apple.com
• If you have not redeemed the gift card to your Apple ID, and you are shopping online, at checkout you would click ‘Apply an Apple Gift Card’. You can redeem up to 8 gift cards per order.
• If you have a physical gift card, you can visit an Apple Retail Store and apply the gift card towards your purchase. You can’t use your Apple ID balance in-store, only online.

Note that Apple has very specific terms and conditions as to where and when you can use an Apple Gift Card, including whether or not you have redeemed your card to your Apple Account balance.
