Epson Printer Settings OS Monterey

Have just connected my Epson Photo Stylus R2000 via WiFi to new (2020) iMac running OS Monterey. Downloaded latest driver from Epson website. The printer receives data and prints, but on default settings only. Settings no longer appear when the printer is selected, so I can't alter print media, colour settings etc. The only options appearing in Print dialogue box are to set paper size and orientation. Anyone any ideas please? Thanks in advance.

Please do the following in this order:

Uninstall all Epson software, put in the Trash and empty the Trash.
Please reset the printing system per Reset the Mac printing system to solve a problem
Next, follow the instructions in Adding a printer
