iOs upgrade not all the way to Monterey

I have a Mac mini with OS Catalina 10.15.7. The Mac is capable of updating to Monterey, however I have software which is only compatible with Big Sur at the most. How do I update only to Big Sur and not all the way to Monterey? Thanks
