The Wallet and Apple Pay icon is only present in System Preferences on Macs equipped with a touch sensor, essential for user authentication via Touch ID, so you won't find this on the iMac Pro and at the present time there is no option for Face ID recognition with Apple Pay and Wallet with the now superseded iMac Pro.
You can still use Apple Pay on your iMac Pro to make purchases via Safari browser but you need to have a compatible iPhone or iPad with Touch Sensor or Face ID. When you make a purchase using the Apple Pay logo on a Safari web page open on your iMac Pro you will be prompted to confirm the purchase on your iPhone or iPad using Touch ID or Face ID.
These two web page links (from the UK Apple Support site) have further information to help you.
if not redirected automatically to your own locality specific Apple support site then using the search query on your regional Apple online store should find the pertinent terms and conditions and supported hardware applicable to where you reside.
