If I change my message history from forever to one year on my iPad will it also delete messages on my iPhone?

If you are synchronising your Messages between devices via iCloud, deletions from one device will delete the messages everywhere.

If you use messages in iCloud I believe it will as messages will be deleted from your iPad and be reflected across all devices.
