i have one contact that the option to facetime is not there ?

That contact has FaceTime off or not set it up yet on the iPhone

If you can facetime everyone in your contact that has an iphone except for said contact, then the issue is on his/her side, more than likely they have facetime off or isn't set up.

They may not have enabled FaceTime, or FaceTime may be restricted in their area. Either way, it's likely to be something on their side that's outside of your direct control.
