I have 2 wifi networks on my iphone that I don’t know the password to, but my security cameras keep asking me to join it for setup, which I can’t. There is no forget network option. How do I delete these?

If your security cameras are asking you it’s because the cameras see the networks, not because your phone does. You can only forget a network that you have connected to.
