I am trying to use my Fujitsu s51o on my Mac mini Monterey and I cannot find a solution

The paid VueScan Professional scanning software supports this scanner without any Fujitsu software or drivers. You can trial the VueScan software before you make any purchase decision. Definitely vendor independence without having to purchase new scanner.

In 2010, I purchased VueScan Professional because Canon had abandoned an older flatbed scanner model. I have never paid the VueScan vendor for any product update in the last eleven years and that same Canon scanner works on my new 16-inch M1 Pro MacBook Pro (macOS 12.1) and the current version of VueScan.
