I cannot sign out of Google app on iPhone (13).
Many users on Google help have the same issue.
The Web suggests that it's on the drop down menu under the profile pic.
It's not.
Can you please help?

I'm truly sorry that you have difficulty with Google, but when a 3rd party app fails or has trouble, you need to go to the app developer for support. I provided you with the correct answer, but if you don't like my answer, you are welcome to wait and see if anyone else responds. I won't take any offense.
Google app is a Google product and they would need to provide support to you. Contact Google Support.
