Generally ethernet adapters should not need a driver to be used, no. However, it will come down to the specific adapter being used and wether it has any specific not standard features that may require a driver or other added software.
Using a MacBook Air, 13 inch, 2017. Monterey 12.0.1.
I'm trying to use a NewerTech USB 3.0 Gigabit Ethernet adapter purchased from OWC. The OWC web page (https://eshop.macsales.com/tech_center/index.cfm?page=/manuals/item/nwtadpu3gige.html) recommended a driver. Haven't tried to install it as readme.txt has the line "Cannot install driver on os version 10.11 and later." Strange, being used to Mac's plug and play capabilities for so long.
Try to use it without the driver. It should not be necessary on macOS 11 or 12.
Plug it in, and look for the ethernet connection in System Preferences->Network
