why can't I disable the 'Automatic Downloads' function in Apple Music on my iMac 24?
I have tried all the usual signing in and out, un-syncing and re-syncing library etc. etc., it's got me flummoxed! I don't want to store the files on my iMac any longer I have decided to stream only now I have an unlimited data account. Thanks team :)

We understand that you wish to disable Automatic Downloads in Music on your Mac. Do the steps in the following support article not disable this option?
Open the Music app, go to Music > Preferences > General and uncheck the option for Automatic Downloads. If it is already unchecked, check the option, restart the computer and then go back in and uncheck it again.

And for me. now all ok.
So I deleted the existing Music user file completely and started again. Absolutely no difference unfortunately - it seems it's an app software problem as opposed to some user preference issues or whatever. I guess a Music app re-install is the next possibility.
