Here's the thing I run a MacBook Pro (15-inch, 2019) which is working fine however I have 706 cycles on the battery as of writing 7th January 2022. I am wondering when should I upgrade my Mac? Also which one should I do? If I do upgrade it.
"Which one" has the same answer as "when". My 2011 MBP was 8 years old and 3 years outside of official Apple support when I bought my 2019. Also there were not MacOS upgrades available.
My answer for you is: Does something about it NOT fit your needs?
EDIT: Dead battery can be replaced and the system will be fine after.
Only you know when it no longer works for you. As long as it is doing its job you don't need to replace it.
I do question why there are so many battery cycles. Leave the computer plugged in whenever convenient to do so. Leaving it plugged in will reduce the rate of accumulation of battery cycles.
If you are thinking of the M1 and you use your computer for work you better check that all your apps will work on the M1.
Manu are using Go64 https://www.stclairsoft.com/Go64/index.html to find out which applications stop working under 64 bit as well, and you will have Monterey which is a 64 bit MacOS.
