I can't install iOS15.2.1 into my iPhone12 using iTunes. It comes up immediately with the message ""To update your iPhone to iOS 15.2.1, you need to install the latest version of iTunes". I have gone to Help/Check for Updates and it says I have the latest version, 12.10.11.2. I went to the app store and downloaded and installed a new version anyway, same result.
Is iTunes no longer an acceptable method of updating phones?

More info. After installing Windows 10, a new update appeared for iTunes which was not available in Win7 as I suspected.
iTunes latest version is 12.12.2.2 for Windows. What version of Windows do you have?
If you want to install iOS 15.xx using iTunes you need Windows 10 (or 11).
I'll tell you the same thing I told the OP. Update your iPhone via the phone itself. Make sure you are connected to a stable wi-fi, connect to power, then go to Settings>General>Software Update and follow the screen prompts to update.

As you have seen that is your problem. With the fact that Windows 7 is no longer supported by Microsoft, I would be updating the OS too, as the vulnerability of the OS supports updating.
Better check before you try. Microsoft is already releasing Windows 11, and if you have not received any information in the past about your laptop to update to Windows 10, I would guess it probably won't support it. You should find information on the Microsoft Windows website about the necessary hardware requirements for Windows 10.

I run in too the same problem with windows 8.1
Not sure or I want to update to 10 or 11 because off other software licenses and spects
