Moving Mail's Trash into Archives

I use iCloud, and Apple's various stock email clients. And unfortunately I find that either on iOS or on Mac they change my Preferences to do things like delete Trash after 1 week. I found my Phone did that this morning when I was looking for an email address. Archiving is turned on but it only Archives manually. The answer I think should be to respect Archiving everything and let the human do the purge. I have looked to write a rule on either the Mac or in iCloud to move everything in an email folder. Is there a trick I am missing?

Archiving of mails in iCloud.com is done manually Archive email in Mail on iCloud.com - Apple Support

However , you can create rules for incoming mails to move in a folder Set up rules to filter email in Mail on iCloud.com - Apple Support

Unfortunately this is helpful but not a solution. I have figured out that I can set up Archiving and it works on iOS by default THOUGH I must do it on every iOS device since Settings don't sync across devices. On my Mac which is where I mostly process email the Delete key sends email to the Trash. If I mouse to the Archive target that works. Does look like there is a three keystroke combo. Any way to remap that combo to the Delete key?
