I don't know...

Here is the other discussion if you are interested - https://forums.macrumors.com/threads/cant-calibrate-new-xdr-macbook-pro-display-missing-color-button-calibration-option.2319627/

After starting the calibrator and calibrating it creates an icc file on the same place as usual (/Library/ColorSync/Profiles/Displays) and fortunately uses it, but if you try the drop down menu or something - you lose the calibration - the file is there, but the mac is not using it... and no way to choose it, so basically the only option is to calibrate and hold your breath... until something happens, which... is kind of ridiculous.

Hope apple will fix it...

EDIT

I got it - it's on the link I posted but I did't pay enough attention - after creating the icc file you can choose it form /Utilities/ColorSync app - Devices - Current Profile:

Right... but sad what macOS is becoming..

Resume for the next poor one who will try to calibrate the monitor:

  1. If the 'option and +' is not opening the Calibration expert mode, you need to manually start it, again pressing 'option' and starting the Display Calibrator.app, found in /Macintosh HD/System/Library/ColorSync/Calibrators.
  2. When losing the current profile or re-install the macOS, copy the icc profile in the Display/Profiles folder and choose it from Launchpad - Other - ColorSync Utility, than Devices - Display/ColorLCD - Current Profile.

Yes, no matter what I press it opens only this:

'how can I copy ready profile that's created?' means, that I used to keep my profiles, after the calibration, and re-use them on every re-install of the macOS... up to now..

I found a way to start the 'deeeeeeply hidden' (?????) calibration tool, there is a discussion in the macrumors site, but now it appears impossible to copy the icc file and select it from the drop down menu... another ridiculous thing from apple...

btw this new macOS keeps kind of stucking and looks really not good at all

I'm afraid I can't help much on the screen you're seeing. That's completely different (for a laptop?) than what I get on my Mac Mini.

As far as finding the custom profiles you create, they're either going to be in the /Library/ColorSync/Profiles folder, or in your user account's ~/Library/ColorSync/Profiles folder. The tilde ~ just means the active user account.

Ah, gotcha. I have a feeling, based on your screen shot of fixed choices, that there are no typical monitor profiles on you Mac. But rather, the choices are saved in a .plist file and applied according to that.

Which is probably a bad guess since you'd think there'd be an actual .icc / .icm profile somewhere. Unfortunately, I have no way of testing or looking to try and see what's going on.
