Getting this to be an Option:

Contact a company like Epson. They probably have yet to do their part in making drivers compatible with the M1 Processor. Important: Get these drivers directly from the manufacture. Getting it elsewhere, you may end up installing malware and junk files.

You can use the camera on your iPhone as a scanner.

In fact, there is a scan feature in the Notes app (the camera icon at the bottom of the screen).

Nothing is more portable or more versatile than an iPhone. 
