Welcome to Apple Support Communities. You would like to sign out of Apple Music on your iPhone so that you can sign in with a new account. Right?

You can sign out from Settings > [Your name] > Media & Purchases > Sign out. This will sign you out of iTunes and the App Store. If you are using Apple Music and have any music downloaded for offline listening, those will be removed as well.

If you need to sign out of your Apple ID in all apps, you can use the guidance from Sign out of iCloud on your iPhone, iPad, iPod touch, Apple TV, or Mac.
