I have purchased a song from itunes, and needed to shorten it for a ballet perfomance, I have done that on my windows laptop, but it will not show the trimmed version on my iphone.
I cannot seem to find an answer for this anywhere.

When you use the iTunes options to set start and end times for a track these don't get synced/obeyed on your device. See Convert music file formats in iTunes on PC - Apple Support and create a trimmed copy of the file which you can use elsewhere.
