My wife and I are currently sharing an Apple ID; if she creates her own and then registers her phone to it, will it disrupt any of her current apps or phone set up like email, etc. Any tips for doing this process with minimal interruptions? We plan on attaching it to a family sharing plan as well.

When changing to the new ID, there may be some data loss, but she can minimize it. If syncing photos with iCloud, ensure Optimization is turned off in Settings/Your Name/iCloud/Photos and/or in Photos/Preferences/iCloud. Then make sure full resolution photos are on the device/computer. When signing out of iCloud, if asked whether she wants to retain data, choose yes.
