Communication error with Epson XP-2100 printer

I installed an Epson XP-2105 printer about 6 months ago. It's wireless and has worked perfectly fine until now. When I go to print, my Mac 'looks for printer' for a few seconds and then tells me there's a communication error.

It won't pick up the printer in the Epson software either, so I can't even reset the printer or see if it's connected to my Mac. The printer is low on ink but the Epson ink-check programme can't find the printer to tell me I need new ink so I know it isn't the low ink that's causing the problem.

I did print a network connection sheet from the printer itself and it all seems fine; the only thing I did notice is that the printer has a different IP address to my laptop.

If anyone has any ideas please let me know. I have done the following:

Checked the printer network connection

Reset my printers on my Mac (weirdly, when I went to add it again it was able to find it and add it to my printer list)

Unplugged the printer for a couple minutes and plugged back in

Pressed the error button on the printer to see if it would do anything (it didn't)

MacBook Pro 13″, macOS 11.6
