Every time I right click a file and slide down the menu, it catches on "Open With" and spins the beachball forEVER while the "Open With" menu opens.
I have not ever and will not ever use the "Open With" menu.
Is it possible to remove it?

In Energy Saver System preferences, disable putting drives to sleep. Then, they won't have to spin up when you try to access them (which is what is happening when you see the spinning wheel).
If I've been using the machine heavily for an hour, I doubt the drive is idle.
