How does one get rid of text shading?
iMac 27″ 5K, macOS 12.1
Select the text.
Click the Format brush to open the Format inspector.
Choose Text in the bar near the top of the Inspector window.
Click the v to the right of the ✇ token to open the Advanced Options.
Click the "Shadow" checkbox to uncheck it.
Close the Inspector.
Done.

Do you mean text background? Here is a document with the text "The Listeners" with a text background.
Select the text (or, if you want the whole document to have no text background) Select All (command A).
Format Panel > Text > Font > Gear wheel > Text Background
Choose the rectangle with the diagonal red line (No Fill).
Gone!
